Lemon Anchovies

Method :
Make lemon water with boiling water and agar agar and cool.
Add lemon juice and sugar and blend well.
Reduce mandarin puree over low heat and cool
Clean prawns and marinate for 15 minutes using salt and olive oil
To serve, drizzle mandarin puree and lemon sauce on your plate in lines.
Now sprinkle pineapple sage flowers and lemon thyme over sauce before you place
prawns on top.
Serve cold as starter.

- 250 ml mandarin puree
- 55 g lemon juice
- 5 g sugar
- 1.2 g agar agar
- 200g water
- Olive oil
- Seasoning salt
- 8 shelled red prawns
- Lemon thyme
- Torn pineapple sage flowers
